Become a member of the focus group and help shape Pinchido's future! 

NOVEMBER 9 - DECEMBER 6, 2020

In anticipation of launching Pinchido.com in 2021, I'm holding a series of live online classes and activities with a focus group over the course of four weeks.

 

As a member, you will have full access to the calendar (there's something scheduled nearly every day!) and will have the opportunity to provide feedback that will help shape the final program. All you need to show up is your favorite piece of technology and a Zoom account.

Below you'll find the tentative calendar along with descriptions of each session and how you can be involved. In addition to your input, every bit of your contribution will go towards the equipment, services, and labor we need to get off the ground. 

This is more than just cooking classes.

This is an experiential food experiment.

Each week will consist of some combination (or all) of: 

 

  • cooking classes

  • market tours

  • ingredient shopping

  • pantry raids

  • dedicated live kitchen help hours

  • cooking challenges/assignments

  • member-led classes

  • workshops

  • virtual meals

  • presentations

  • and whatever we want to try out as we go!

The duration of each session will be between 30 minutes and 3 hours, the average being about 1/1.5 hours.

The exact times will be determined as I have an idea of where everyone joining from. When possible, should it benefit a large minority or small majority of the group, some sessions will have multiple times.

All times are in Central Daylight Time time as of now and may change to accommodate the greatest number of members. Additional times may be added, or times may alternate between weeks, to accommodate more!
Each session will be recorded and posted to the website in the Member's area in the archive for later viewing.
As a reminder, members are not required to attend every session. 
Each week will have a similar structure, only the topics will change along with any adjustments suggested by the group.

WELCOME & PANTRY RAIDS

30 minutes each of 3 pantry raids where members show us the depths of their pantries and forgotten ingredients. All members are welcome to brainstorm and give suggestions on what to cook with them! The recipes are submitted within 24 hours and the recipes are online within three days.

10-11 AM

VISITITA: Mercado San Juan

Mexico City's Gourmet Market, also referred to as the "exotic" market because of the variety of peculiar ingredients by today’s western standards, such as insects and lion meat, has the best quality EVERYTHING, and is the market where chefs do their shopping. We’ll speak with the vendors that sell everything Oaxacan and take a few questions from members. If you see anything you like, we’ll have it shipped to you!*

 

We all mourn travel. Visits are ways to help you get to know the city and give you some local knowledge while supporting local businesses that have been hurt by the travel ban whenever possible. In lieu of traveling, this is the closest you can get to the insider perspective of Mexico City!

WEDNESDAY WORKSHOP: Immune System & Antiviral Foods

Although there is no magic bullet when it comes to viruses, our best defense are our digestive and immune systems. We’ll take a look at some of the science and mechanics of how and why, along with the ingredients that work to support them.

HERB SESH: Mexican Tarragon

We’ll explore the origin, uses (edible/medicinal/other), plant care, and recipes using this overlooked cousin of the equally underused French tarragon, both members of the sunflower family.

LIVE KITCHEN HELP

Members can text or email kitchen questions about something they cooked, are cooking, or are planning to cook. I'll answer immediately and later post the answers to the blog to share with the world! 

 

In addition to posting these answers, members are also welcome to submit stories, articles, photos, and other content to be posted to the blog! 

 

6-8 PM

PROGRESSIVE DINNER

4 courses, 4 different locations. Just like the classic progressive dinner, but online. Members host a 30 minute portion of the event and share their kitchens, gardens, or any food related things they’d like!  R

 

Hosting is on a voluntary basis and selected in order of submission. During the focus group, we will have 8 slots available. 

 

CHOWROULETTE: Alternate Fridays we will host Chowroulette, where members are randomly paired up with other members or people from around the world to share a meal together and get to know someone and someplace new.

COOKING CLASS: Antiviral Recipes For Winter

Recipes that support our digestive and immune systems to ward off winter illnesses. 

Ingredient and equipment lists are made available prior to each class. Because we’ll cover a lot of ground in a short amount of time, members are encouraged to prep their ingredients (wash, chop, dice, slice, soak, hunt…) and work areas (mis en place) beforehand if they are cooking along so that they can keep pace.

Member hosted cooking courses are a great way to share a family favorite, test out a new recipe of your own, try something new together, or perhaps casually discovering the new Martha Stewart! 

 

3-5 PM

Hosting is on a voluntary basis and selected in order of submission. Ingredient and equipment lists must be posted a minimum of three days prior. Network and hardware tests between hosts and myself will be run prior to acceptance to assure that the quality of each connection is sufficient and to allow time for troubleshooting if needed.
